and how to choose it.

First of all, the olive oil that we are going to choose for eating

must be an Extra Virgin olive oil.

What does Extra Virgin mean?

Simply a good quality oil.

To have the Extra Virgin designation,

There are two main criteria.

1: The acidity level must be below 0.8%

2: The taste must be good, (neither rancid nor moldy)

ATTENTION !!!

The acidity level has nothing to do with taste, it's pure chemistry, it's the oleic acid level.

Moreover ,

An Extra Virgin olive oil will be cold pressed,

that is to say around 27 degrees.

It will not have undergone any chemical treatment.

It will come from the first pressing of the olives.

And it will be obtained solely by mechanical processes (without chemicals or refining).
